- prep the chicken: season the chicken on both sides with salt, pepper, thyme, and paprika.
- sear the chicken: heat olive oil in a large skillet over medium-high heat. add the chicken and cook for about 5-6 minutes per side, or until golden and cooked through.
- remove from pan and set aside.
- sauté garlic: in the same pan, reduce heat to medium. add butter and minced garlic. sauté for 1–2 minutes until fragrant (dont burn it!🐰).
- deglaze and simmer: pour in the chicken broth (or wine), scraping the bottom of the pan to release any brown bits. simmer for 2–3 minutes until slightly reduced.
- return chicken to pan: add the chicken back into the skillet and spoon the garlic sauce over the top. let it simmer for 2–3 more minutes.
- garnish & serve: sprinkle with fresh chopped parsley and serve warm.
you can also serve over mashed potatoes, rice or pasta ^_^ or add a side of vegetables or a side salad
